I love the Ice type in general, but I wish it didn't have so many weaknesses... that's why I give my water types Ice Beam because they don't share the weaknesses that Ice types have. Anyway; my favorite ice types (in no particular order):
1. Lapras - Lapras has been an essential member of my Soulsilver team because I couldn't find a good water type before the elite 4 that's not vaporeon. It's over all stats are fairly balanced, with an above average HP and a below average Speed, so it can use both physical and special moves to good use.
2. Mamoswine - I used a Mamoswine for my Pokemon X file as a dragon killer and it quickly became an integral member of my team late game. It's also immune to all weather effects as well as super effective against 9 types via STAB of Ground and Ice type moves.
3. Weavile - It's the fastest Ice type and tied with darkrai for the fastest Dark type and it hits extremely hard with an insane attack stat. The only problem with it is that the only ice type move worth a damn for Weavile is ice punch (and Icicle Crash Gen VI onward), which it doesn't learn level up. I used it as a solution to Cynthia's garchomp in Platinum and I OHKO'ed that mofo with a single ice punch.
4. Vanilluxe - Yes, it's the freakin' Ice cream cone. While it's design is terrible, this thing has the highest base stat total of all non-legendary ice types. Again, I used it as a dragon killer for the elite 4, and the results were fantastic.
Honestly, those are the only Ice types that I've used frequently. Yea, I do have a glaceon, a walrein, a dewgong, and I also trained a Jynx on my first playthrough through Crystal, ?but I never used them. I like Ice type MOVES, but I usually stay away from ice type pokemon because they are extremely slow and the ones that aren't have terrible stats (like most pokemon with an extremely high speed stat), or heavily rely on a move that the can't learn via level up.
