Ok. To start off it takes an HUGE amount of time if you want to do a major hack. Remember to have patience if you are going to make it.
I actually hack the game you will need a few things.
A pokemon gold ROM.
An emulator to test it
The right tools to actually hack it
And a computer or something to actually hack it
Make sure you know the legal issues with hacking. To "legally" keep a rom on your counter for more than 24 hours you need to own the actual game in real life. If course you can still hack it but a cop or someone finds out you can get in trouble.
You don't need an emulator but I would recommend getting one to test it. There are a lot of gb and gba ( forgot what system gold is for ) emulators out there. You just need to look.
To do the actual hacking you need to download a hacking tool. If you want to edit the map, wild pokemon and other Basic stuff I would recommend downloading advance map. If you want to change the items in the marts you can download advance mart but I don't know if that is safe. To change or make scripts you can download things like pksv ( this can make the scripts for you ) or xse extreme script editior. Be warned scripts can easily be the hardest think to make.
And obviously you need something like a computer to use all of these things. I can't help you use the tools or actually help you make it. I hope I helped!

I'm not sure if I can tell you where since the downloads are on competition sites ( other forums ) just do what ender said. And I'm not sure if they work on Mac. They probably do. And if you are going to submit the hack to vizzed it probably won't get popular if you just change it a little. And I hacked leaf green ( since I own leaf green in real life ) a little bit. I don't think the script editiors work on my computer.

My sticky has a list of hacking tools as well. Though most of them are for GBA games and work better with the GBA Pokemon games... there might still be something in there for use with GBC as well. It's at least a start.

If you ever did want to get into GBA hacking, I could actually help you with that since I've done a little bit of work with Fire Red/Leaf Green and Emerald.
