Yu Yevon was easy, but I count Final Aeon as last boss. Also Sephiroth, he took one Omnislash at lvl 99, with Sephiroths stats as high as possible.

If you have the special mask the easiest boss would have to be Majoras Mask.
Took me one try and I didin't even get down to half of my health on it.

I'm saying the final boss of New Super Mario Bros. Reason why? While if you have a mega mushroom. BOOM! Dead in 1 second, quite stupid actually, the stage leading to the fial boss wasn't all too challenging either.

I say the easiest final boss I've fought was the final boss of Lock's Quest. I just built a few walls to protect the clockwork leader, and just rush him. He went down in about a minute since you don't have to kill the soliders.
