I like to use fresh herbs in my cooking, dried herbs are not inferior they are just too strong and you can easily use too much, I have come accross freeze dried herbs and they are a bit better than the traditional dried stuff, but you cannot beat fresh.

Bazil is amazing, but can be too powerful for me, its got a kind of medicinal taste, but can work well with somethings, but is not my favorite.

Parsley is so mild, but its presence makes a big difference to all my dishes, definately a keeper.

Coriander, works well with so many Asian dishes and curries, sprinkled on a grill with onions it is divine.

and finally for now I want to discuss Chives, wonderful onion flavor tasting chives, what a wonderful herb with sour cream!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Definitely BASIL! I love it, it is so useful fresh. My absolute favorite sauce is pesto made with tons of fresh basil and parsley. (If you add parsley to your pesto, it makes the basil go a longer way and it also helps to cut the garlic breath.) I also find parsley by itself very useful, it is definitely superior to dried parsley. It's good on basically anything savoury, I find it is a must in soup.

Chives (technically not herbs but I do grow them in my herb barrel) are great to have around, they also go good in everything in things like sandwiches, burritos. Not meant to be cooked otherwise their mild flavor is drowned out.

Fresh coriander/cilantro very useful for making Indian and Mexican dishes, especially salsa and guacamole.

Mint is excellent because it is easy to grow, and it's wonderful in tea, hot chocolate, as a garnish/flavoring in desserts (especially desserts with chocolate) and of course in Mojitos!

Dill weed is useful because the fresh plant is so much stronger than the dried version. I like to put fresh dill in creamy dips.

Rosemary is another one, it adds a wonderful savory flavor to a whole bunch of things: baked potatoes, freshly baked bread, and roasts. I like rosemary because it is so strong and aromatic; you can cook it at high temps, and it's flavor will not be destroyed or overpowered.

I love herbs. Fresh and dried, but I prefer fresh, which most do! Dill smells wonderfully and tastes great. Basil, rosemary, coriander-though I haven't used much, parsley, mint-gotta love it, and cilantro.

Basil FTW! It is my all-time favorite. I also like Oregano, Thyme, Rosemary, Cilantro (aka Coriander), Cumin, and Bay Leaves. Dill is also good, but I don't use it that much. Same with Mint... love it, rarely use it. Oh yes, and Cayenne, cannot forget the Cayenne... I love spicy food.
