If I can only pick one I go with Shining Force II. By playing it on Vizzed for the first time in over 15 years I was able to discover something new: the Elven Forest special stage. It was very useful to make my movies. Once I spend countless hours leveling my characters to insanely high levels thanks to that Dark Mist monster (promoted level 24), I was able to simply skim through every battle afterwards

I can only go with the ones I've played so far, which isn't many (yet, I'm getting there, I swear! I'm just a completionist). But of those few, excluding hacks, I guess Paper Mario would have to be it. I never got to play it on the actual system, so getting to play it now is amazing, even with the ROM glitches and occasional screen flashes that I can't watch. I don't think I've ever enjoyed a Mario game as much as this...except for maaaybe Super Mario Sunshine, but that's only a 'maybe'.
