How you change your controls depends on what system you're playing. If you're playing a MAME game, for example, you can hit tab or escape. For most other systems, you can double click the screen, I believe. There should be instructions on the plugin somewhere.

If you are wondering how to change controls for SNES, you press Escape (Esc) and click on 'CONFIG' and from there, you click 'INPUT'. And then you can change it.
