I'd definitely have to say that the easiest Mario Kart 8 track in my opinion is Sunshine Airport. Despite all the twists, turns, and obstacles that track has on it, I seem to have an easy time finishing in 1st on that track. I thought about saying Mount Wario, but Sunshine Airport is my pick for easiest.

As for the hardest, I'd have to say Rainbow Road. I don't know what it is about this game's rainbow road, but I can never seem to do good on that track in multiplayer. It's been awhile since I felt the sweet taste of victory on that track in online multiplayer.
