Legend of Zelda: A Link to the Past.

I grew up playing that game and I couldn't get enough. The music was well done without being over the top. I also didn't get tired of whatever song was playing like I have with some games.

I just think it was really well done.... especially for its time.

I loved the soundtrack to The Legend of Zelda: Skyward Sword quite a bit.  Those moments when you're flying through the sky on your Loftwing looking for treasure and adventure might not have felt so magnificent without the soundtrack to back it up.  That game was simply an experience not to be missed, not just by the gameplay, but thanks to the soundtrack.  It made every moment delightful and moving.

The Legend of Zelda: Wind Waker soundtrack is definitely my favorite Nintendo soundtrack of all time. That soundtrack is the audio definition of "adventure".
Also, the Metroid Prime series has some awesome songs. That's a close runner-up.

I haven't actually played Super Mario RPG to the point where it plays, but I really likes the Forest Maze theme. I remember falling in love with it when hearing it in the weird fan game called Gangster Bros.

The tower music, especially, loops after 90 seconds and is comparable to Sega Genesis music with its heavy synth. I have also rarely heard such diversity for a soundtrack before The PSX era.

I'd have to say as far as soundtracks, probably say either Final Fantasy VI, IV, Chrono Trigger, and The Legend of Zelda: Ocarina of Time have the best soundtracks by far. All of those games have absolutely incredible soundtracks that I want to listen to over and over again.
