I guess mine would be Omega Ridley from Metroid Prime 3. Even though I thought he was a tad bit to easy especially for the first time playing against him I liked his character design and thought the visual effects during his battle were neat. The environment was a nice touch too, an organic looking dome that he disappeared into while flying around the arena.
