My choice is the Summoner... something about being able to summon large dragons, demonic beasts, giant mutated chickens, and mecha shaped like ancient castles intrigues me. That and most summoners are able to use a secondary class of magic, either black or white.

White Mages are good to have...but just one is enough. You need something to deal the damage, and red mages can do that, and heal.
