I look at specific forums more than I use new posts.
Having said that, I love the new post feature and have used it extensively ever since I found it. I also check specific forums that I find interesting from time to time.

Honestly, just creeping the New Posts is not a good way to find interesting discussion. If I'm really bored I go into them and look that way but that's not often.

Only when I am in a tight spot do I actually go into specific forums, I can basically go the first 5-15 posts from the new posts and then go into the designated forums on my routine trail of places where I make a habit of posting every day and then when I run out I go into specific forums to look for elimination threads and stuff like that which I go for as a last resort because they are helpful when I am in a pinch to get some last minute posts in quickly. Good question by the way.

I do both. Subforums are great for finding things you want to post about, while the new posts are a good way to stumble across something that you didn't know that you wanted to post about.
