I'd like to continue my favorite line of contests: Cooking Competitions! The first collect of astounding recipes you vizzed users gave me can be found here, and although the second competition had to end early due to real life events, I tried to hold another here a few months later. Hence, I didn't feel right calling this competition number 3, but it's not quite my second attempt, either.

Anyways, I have made a resolution to live healthier, and part of this means much less fast food, and no more Ritz crackers for lunch! I can't cook, but I know there are many of you out there who can!

I'd love especially, if I could get entries from the people I consider most promising:

So how would this run? Well, basically, I'm going to maintain the rules as I did the last two times. This time however, the Viz reward will have to be reduced since I just bought a very expensive forum. Please remember when providing entries, also, that I am not very rich and need easily accessible ingredients.

Help me learn and help me stick to my resolution in living a better life! I'm going to maintain the theme I tried last time: healthy foods. However, I'm not going to be as restrictive since it seemed to push a lot of contestants away.

The Rules:
1. Each meal must be as healthy as possible. Fruits and veggies would be a plus!

2. If you design something like a salad, I'd really like you to give me a healthy sauce to create instead of normal salad dressing. Remember, healthy and good tasting food is the aim!

3. Please keep ingredients fairly normal and reasonably priced. I don't have a lot of money, and I do most of my shopping at Wal-Mart.

4. Instructions should be as detailed as possible. I'm not a chef by any means. I've even ruined brownies from a box. I would like to COOK something though.

5. Recipes have to be ORIGINAL. What does this mean? Don't collect a recipe off the web using Google. Don't use a published cookbook. I'm looking for home and family recipes. If you want to see a few examples of what I'm looking for, try viewing the rules and submissions of my first cooking contest.

6. You will be judged on several criteria: appearance, taste, originality, cost, and efficiency of instruction.

Deadline: December 1, 2013 TBA

WHAT!?!?! No more Ritz crackers? ( There goes my recipe lol )  I don't think I was part of the expensive forum.   ( Sorry winners! ) I may not be very good in the appearance section. Is there any special type of meal you would like? I can cook ( sort of ) and I have a bunch of recipes.

"Must be as healthy as possible" aaand I'm instantly disqualified, I can't think of any recipes I know that are that healthy. My famous chili recipe would be what I would use though. My grandmother taught me how to make Caesar dressing, if you want a Caesar salad recipe.

Ok SInge... this is a pretty daring recipe! I'm almost sure your husband will hate it (it has no meat), and if you don't like guacamole... then you will not like it.

But, this is a fantastic mexican meal.

It is:

Bean & Corn Tacos with Guacamole

See, we always think of home made tacos made with ground beef... but we both know that isn't the most health, don't we. And so we will use Beans (which is much more traditionally Mexican) as our protein. But we love food with fat in it, don't we? So instead we use avocados (main ingredient in guacamole) as they are high in fat... but it's the best possible type of fat. That way you have a delicious meal that IS healthy.

Remember that you CAN substitute the beans and corn for ground beef if you want, the entire recipe will work the same, just use beef instead.

I am a bit of a Guacamole connoisseur, if I do say so myself. I have
had it from dozens of restaurants (including a few in Mexico) and always take note of the flavours
when I eat it. I've made it probably 100 times and keep experimenting
with it. So here I have a simple, yet awesome guacamole recipe for you!

Also, I tried to make the instructions super easy... don't be insulted if they are at times too "baby steps", but it's just in case you were not sure about something.

NOTE ON PICKING AVOCADO:
The single biggest mistake people make when making guacamole is using bad avocados. This is possibly the most important part of the recipe and after this, it's hard to go terribly wrong. The perfect ripeness for avocados only lasts about 2 days or, so I would suggest going to the supermaket with only the OPTION of picking up the ingredients for my recepie, and if there are no good avocados, forget about it and try in about 5 days.

1st, the colour. Good Avocados should be very dark... with sometime slight hint of red wine colour or a hue of very dark green. Do not get green or brown avocados. Also look at the stem indent (sometimes you have to take the stem out), it should be light beige-green and not brown.

2nd, the feel. When you've spotted a few good looking avocados, lightly squeeze them. Un-ripe avocados are rock hard, over-ripe avocados as a little mushy. Perfect avocados are firm, but also a give little bounce (like a firm lemon)... they are not mushy.
I know it sounds complicated, just don't stress over it. If you are stressing about it, just pick two nice dark ones that aren't mushy and it will do.

* The footnotes with a number are there to help clarify and make things easier. The lettered footnotes are extra information that is not necessary, but you may want to look at to perfect the meal; if you are getting confuse, forget the lettered footnotes and stick to the numbered.

Ingredients:

2 – Avocados
1 – Lime A
3 – Regular Cloves of garlic
1 Bunch - Cilantro (A fresh herb, I think WalMart carries)
1 Tablespoon - Liquid from bottles of Jalape?o peppers and/or banana peppers. 1
1 & 1/2 Cup - Canned Black beans 2
3/4 Cup - Canned Whole Corn
1/4 - Large red onion
1/2 - Red and/or yellow and/or orange bell pepper. B
1 Rounded tablespoon3 - Tex Mex spices (found with the spices). (If you cannot find any, get the Taco spices usually next to the taco kits)
4 - Medium or large tortillas C (whole wheat to make it healthier)
1 Bag - Tostitos Chips (again a whole wheat option)
1 Tablespoon - Olive oil
4 - Cherry Tomatoes
1 bag - Romaine lettuce mix (or another lettuce mix of your preference)
1 Cup - Feta Cheese (If you don’t like feta, Monterey Jack can be used)
Salt and Pepper D
Optional – Salsa (If either of you hate Guacamole, you can still eat the wraps with salsa)

Directions:

I'll give you instructions in the order that will save you the most time.
1. Start by chopping the garlic and about a handful of cilantro. 4
2. Cut the onion and the bell peppers into small to medium size pieces (size isn't too important).
3. Cut the cherry tomatoes in quarters.
4. Place the chopped veggies into separate bowls for easy use.
5. Take the Black Beans and Corn, and strain them with a strainer.
6. In a medium to large pan, add the table spoon of olive oil, and HALF of the garlic.
7. Turn element too slightly above middle heat, and add the beans and corn.
8. Take the rounded tablespoon of Tex Mex, and add it to the pan. Stir.
9. Salt and Pepper to taste (be generous with cracked pepper).
10. After about 7 minutes of stirring, turn heat down to low (2or3/10).
11. Cut the avocados in half 5
12. Remove the pit, and with a table spoon, scoop out the insides of both avocados and place in a large bowl.
13. (Stir the beans for about 20 seconds.)
14. Take the other half of the garlic, and chop them even more finely (yes, it's terrible). It will go into the guacamole.
15. Cut the lime in half, and firmly squeeze one of the halves into the bowl with the avocados (Don't get all the juice out, just one or two firm squeezes) and put the remaining garlic into the bowl.
16. Add the tablespoon of the liquid of the hot pepper jar, as well as the cilantro into the bowl.
17. Mash it all together. If you have a potato masher, that is great, if not, use a strong fork.
18. Generously salt and pepper, and mash some more. E
19. Lay tortillas on plates (you can start with only two), and place some of the Guac in a line in the middle of each tortilla. F
20. Put about one cherry tomato (now in quarters) and a handful of lettuce in a line too.
21. Add the of the bean/corn mixture in a line on top of it all.
22. Sprinkle a fair amount of feta cheese on the top, and a single layer of Tostitos on top (or crunch them if they don’t fit well).
23. Fold the wrap and enjoy the mess! F

4. The leafy parts are the good bits. The stems are edible, but don’t have much flavour, so make it a handful of the leafy tips.

A. Note on picking good limes: Darker limes are more ripe, and generally better, but what most people don’t know is that the texture of the skin is just as, if not more important. If the skin is wrinkly and porus, it is going to be a dry lime. Choose a lime that has nice smooth skin, and that is a darker green.

C. They should be at least as big as your spread out hand, or a little more.
D. If you don’t use cracked pepper, I must urge you to consider it… it will really make a difference in your cooking. You can get the pepper mill with the pepper already in it at Wal Mart, ready to go. It’s to the point that I actually dislike pepper that isn’t freshly cracked.
E. At this point, take a Tostitos Chip and try a little guacamole. See if you like it, and if it needs more salt.

20. Put about one cherry tomato (now in quarters) and a handful of lettuce in a line too.

22. Sprinkle a fair amount of feta cheese on the top, and a single layer of Tostitos on top (or crunch them if they don’t fit well).

1. Found in the same isle as pickles, pickled jalape?os or banana peppers, or a mixture of both. It really doesn’t matter too much, as we are only going to use the vinegar they are sitting in.

A. Note on picking good limes: Darker limes are more ripe, and generally better, but what most people don’t know is that the texture of the skin is just as, if not more important. If the skin is wrinkly and porus, it is going to be a dry lime. Choose a lime that has nice smooth skin, and that is a darker green.

C. They should be at least as big as your spread out hand, or a little more.
D. If you don’t use cracked pepper, I must urge you to consider it… it will really make a difference in your cooking. You can get the pepper mill with the pepper already in it at Wal Mart, ready to go. It’s to the point that I actually dislike pepper that isn’t freshly cracked.
E. At this point, take a Tostitos Chip and try a little guacamole. See if you like it, and if it needs more salt.

ingredients

Corn tostadas (like a taco shell but not folded... a flat fried tortilla basically )

Shredded lettuce, sliced tomatoes(thin sliced), sliced onions (thin sliced), sliced avocado, sour cream, refried beans (ok... there is cooking after all lol), lemon slice and.....


Green salsa

Green tomatoes, green peppers, salt, red pepper seeds, dried red pepper

Your type of meat... limited (ham is preferred but... chunky chicken bits, turkey, shredded pork shoulder, or shrimp )




Ok... after getting all the ingredients

first, cooking the beans(I prefer cooking raw beans in a pot for about half the day, then put a bit of vegetable oil in a skillet and mash up the beans)

While cooking, grab a tostada tortilla and smear it with the refried beans. After smearing, put your type of meat on it (I prefer ham or if I want to cook... shredded pork shoulder) . After putting in your meat, add shredded lettuce, two slices of thinly cut tomatoes, and thin slices of onions. Avocado cut in half, grab a spoon and scoop up slices and lay it on top of the veggies, finish it up with sour cream.


As for the green sauce. Boil 1 crushed red peppers (those dried up ones), green tomatoes, and green peppers in a small pot. Once all are shriveled up put it on the blender, add a teaspoon of salt, about 2-3 cups of water, bit of uncooked green peppers (1-2), and red pepper seeds for more spicy taste... blend it all until smooth green texture. Taste it before pouring a bit to the tosatda just to see if it needs more salt or heat.

Once you think it's good enough pour it on the tostada.

Enjoy

Here's my second crack at this:

WARMAKER'S ORIENTAL BLACK SOYBEAN SALAD!

Ingredients:
4 cups romaine lettuce, shredded
2 cups cabbage, shredded
1 cup canned corn, drained
1/2 cup scallions, sliced (optional)
1/2 cup red bell pepper, chopped
