When I load my saved game it always resets the time back to the time I originally set when I started a new game.

So when I started my game I set the time to 10.45am. The time runs as normal when I play the game but then when I save it and load it again the time is reset to 10.45am!

This is really frustrating because it means I'm going to miss out on loads of Pokémon and I really wanted to evolve my Eevee into an Umbreon which can only be done at night.

Is there anything I can do?

I think this glitch is well acknowledged so Bulbapedia may have something on it, but I don't have a clue.

Have you tried using the RGR plugin available for free on this site. Right through this link in fact. https://www.vizzed.com/boards/thread.php?id=8676

The time difficulties disappeared when I started using it for the Game Boy Color Games. After installing it you can just use the link on the right side of the game page.

On the downside, you would have to start a new file (like me because the Java Emus aren't working for me all of a sudden), and the game data would be saved to your hard drive so you'd need around 6 Mb of space for each game. But that can be a good thing too. Big site like this, peoples game files get lost all the time. Having game files stored on your drive eliminates that problem to a degree.

I wish you luck.
