I have no clue what to list to be honest.

Maybe we could try using a few games I enjoy as a tournament:

Bomberman
Snowboard Kids (once the black screen is fixed on netplay)
Streets of Rage 1 - 3 (high score tournament)
Dr. Mario
Mario Kart 64
Contra (high score tournament)
Sonic the hedgehog (high score tournament or 2 player race)
Renegade
Double Dragon
Zombies Ate my Neighbors (high score tournament or see who makes it to more levels)
Golden Axe
Number Munchers

That's all I can think of at the moment, my apologies. D:

I like the suggestions so far but I must disagree with 1 on 1 fighters such as Mortal Kombat and Street Fighter simply because you can press start on controller two to endlessly gain points fighting lifeless opponents. Unfortunate because otherwise they would be pretty sweet for competitions. Also, nowadays before I compete in any game I look it up on gamefaqs.com and make sure there aren't any cheats for invincibility or infinite lives etc.

My suggestions are:
(1) Brawlers Streets of Rage 2 and TMNT III. The higher the difficulty setting the
more points you can get in these.
(2) Endless old school arcade games like Galaga, Pac-Man, and Donkey Kong. Even the hardcore
would not be able to max these out.
(3) Platformers such as Super Ghouls and Ghosts that do not have cheats for infinite points like
you can do in many Mario and Sonic games.
(4) Novel use of the highscore system such as a percent completion for Super Metroid which is
displayed at the end of the game. Even if several players maxed out at 100% the time trial
would decide things making it a pretty lengthy but sweet speedrun.
