Need help with repointing, and basic rom hacking.

Hiya,

So I'm creating a fire red rom hack. However I've came to some difficulties down the road with it. I'm having a hard to learning the difference between Repointing and offsets. I'll explain what I mean.
Say, I want to add wild pokemon to a map, when I click "add new wild pokemon" on Advanced maps, it says I need to find a new offset. Which confuses me, I do, search for bytes and hit ok. Then it gives me a list of 5 offsets. I don't want to pick a random offset I'm afraid it will corrupt data, or use an offset from another location of wild pokemon. So I need some help with that. Pretty much the same for everything that requires you to find an offset. I just don't want to make a mistake.
Advanced Trainer editor. I know pretty much the basics on how to use this, like increasing level, adding pokemon, etc. However I came across a small problem, and I know the problem but I wan't to know how to handle this issue. The problem is when I add new pokemon to a specific trainer, then give it new moves, and save it. When i come back or reload it, the moves disappear. I'm pretty sure the problem is that there isn't enough space, so I need to use free space finder. But again that works with offsets, which I have no idea how to use.
If you could help me and explain this in English for noobs, I'd be thankful.
