Got pretty lucky the past 2 months. My brother found a shiny Hoppip and Farfetch'd on his Soul Silver and I found a Ditto in Heart Gold and a Pidove in White. The are all fully evolved and Jumpluff and Unfezant are both EV trained.

I was playing Pokemon Crystal on my emulator a few days ago and I managed to catch a Red Gyarados...It's one of the pokemon I use more than most of the ones I have now.

I only found one and it was a vulpix in leaf green. I traded it to my sister because she wanted a vulpix and we never even noticed it was shiny until it evolved.Shiny ninetails is silver btw.

I first Shiny Pokémon I have ever caught was a shiny Oddish In Pokémon Platinum. Also I caught  a shiny Sentret  in Pokémon Crystal but The Weirdest part is that I caught Sentret when I just started playing in Route 1 ( craziest thing that have ever happen to me in Pokémon Crystal ).
